Trout, gin blackberries & horseradish jackets recipe

Trout, gin blackberries & horseradish jackets

The perfect gluten-free canapé for a Christmas party or a plate of indulgent finger food to enjoy while watching your favourite festive film, this recipe is a great one to add to your repertoire. Crush juniper berries, before adding sloe gin and blackberries and leaving the mixture to soak for a couple of hours. Preheat the oven to 200Cº, gas mark 6. Half a bag of potatoes lengthways, and toss them in oil and season, before roasting for 30 minutes. Once they’re out of the oven and have cooled slightly, scoop out the flesh and return the skins to the oven for a further 10 minutes. Mash the potato flesh with sour cream, horseradish, lemon zest and season. Spoon the mixture back into the skins, and top with a curl of smoked trout and the berry mixture. Finish with a sprig of dill.
