Want to elevate your side dishes this year? These honey roasted carrots, parsnips and beetroots will make a delicious accompaniment to your roast turkey or glazed ham, and require little extra effort for a high reward result. Line a baking tray with greaseproof paper and preheat your oven to 220C/200C fan. In a bowl, mix together ⅓ cup of honey with ¼ dry sherry, before pouring it over your baking tray and coating your carrots and parsnips with the mixture. Drizzle your beetroot with olive oil and season with salt and pepper, before placing the tray in the oven for 40 minutes – making sure to turn your vegetables halfway through. Serve up with a sprinkle of hazelnuts, goats cheese, parsley and optionally sumac.
